Quarantine and Chill: 7 Recipes You Can Make with Those Cans of Beans You’re Hoarding.

Bean sales are at an all time high according to this NYT article. But do y’all even know what to do with those beans???? As a mexican-american, beans are a huuugggeee part of my culture and a staple food product in my household. I’ve compiled a list of my favorite recipes that use a variety of bean types, and hopefully will utilize the majority of your bean stash. (Click on the photos to see each recipe.)

1. Black Bean and Chorizo Soup. I make a simplified version of this recipe that is black bean, chicken broth, and chorizo topped with queso fresca and cilantro. It’s quick, easy, and delicious.

2. Carne Asada Fries. They’re like nachos but ten times better because of the fries. This Southern California classic has been my favorite quarantine meal.

3. Spicy Chicken Stew. I’m not sure if there is an actual name or recipe for this soup, but it’s a meal my mother taught me how to make. I use chicken thighs, chicken broth, potatoes, tomatoes, cannellini beans, and diced green chilis/jalapenos. If I’m feeling really under the weather, I’ll add turmeric to the recipe. It’s easy, filling, and my most cooked meal. 

4. Baked Beans. Barbecue fans are gonna love this maple bacon bean recipe. Get your grill on and make this ASAP.

5. White Bean Chili. A refreshing take on the typical chili bean but you can always go classic as well. 

6. Minestrone Soup. Oh man, this was my fffaaavvvoooorrriittteee soup as a kid. The bean and noodle combo fascinated me. TBH, I haven’t tried to make it myself because I love the Progresso canned version. Perhaps it’s time for a change.

7. Bean Dip. 7-layer bean dip is a meal in itself and don’t let anyone tell you otherwise. I love making this recipe because it requires no cooking! I prefer to do layers of refried beans seasoned with fresh lime juice and garlic, bacon bits, sliced black olives, lettuce, pico, avocado/guac, and queso fresca. I don’t typically use sour cream but a jalapeño ranch dip layer would be awesome!
